Heartland Chili

We've tried several chilis and the combination of corn, pinto beans and tomatoes make this one my favorite.  Leftovers are great too.

1 pound ground sirloin
1/2 cup onion, chopped
1/2 cup green pepper, chopped
2 cans (16 oz. each) pinto beans, undrained
1 can (14 oz.) Rotel tomatoes with green chiles, undrained
1 can (11 oz.) Del Monte Summer Crisp corn, drained
1 can (6 oz.) tomato paste
1/2 cup water
2 Tablespoons chili powder (or to taste)
Salt to taste

  • In a large saucepan or Dutch oven, cook beef, onion, green pepper until meat is browned. Drain.
  • Add remaining ingredients; bring to a boil.
  • Cover, reduce heat and simmer 30 minutes.
Yield: 6 servings
