HEARTY BEANS AND RICE
1 pound hamburger (I used ground sirloin 7% fat)
15 oz. can black beans, rinsed, drained
14 oz. can mild Rotel tomatoes with chilies
11 oz. can corn
1 cup water
1/2 teaspoon salt
1 teaspoon ground cumin
1.5 cups instant brown rice
- Brown and drain hamburger.
- Stir in beans, tomatoes, corn, water, salt. Bring to a boil.
- Stir in rice, return to boil.
- Reduce heat; cover and simmer 5 minutes.
- Remove from heat; let stand, covered, 5 minutes.
YIELD: 5 servings
